Potatos with cuy
The guinea pig is a species of rodent of the Caviidae
family, native to the Andes Mountains.
How to prepare
Ingredients:
Guinea pig viscera
3 branches of white or green onion.
1 tablespoon of achiote.
2 teaspoons of salt.
1 teaspoon of cumin.
½ cup of milk.
4 ounces of roasted peanuts or zambo seed.
Chili pepper to taste and of any variety.
Preparation:
• The viscera are washed and cooked until soft.
• They are cut into small pieces.
• Add the chopped onion, the achiote, the salt and the cumin in a pot.
• The milk and peanuts are blended and added to the previous mixture.
• The mixture is boiled and the cut viscera are added. Later it is allowed
to boil another ten minutes.
